Share an Easy Almond Mandarin Orange Salad

Mandarin Orange
Today, I would like to share with you some of the healing benefits of the mandarin oranges. Mandarin oranges and mandarin orange peels are a great source of Vitamin A and C. Both, the fruit and peel, are excellent in fighting arthritis, because of their high levels of antioxidants.
The mandarin orange peel is considered an excellent antiaging because of its high content of Vitamin A, which also helps with acne and other skin diseases. It contributes to protect the skin and other parts of the body in staying youthful.
On the other hand, the vitamin C in the fruit and peel supports the production of collagen in the skin. Collagen is the protein that makes the skin looks much younger.
Besides, the mandarin orange peel helps keeping healthy cholesterol levels in the blood. Enjoy both, the mandarin orange fruit and peel, in your favorite dishes like salads, rice, meat. Ingredients:
1 1/2 Cup fresh baby arugula
1/4 cup fresh parsley, chopped
1/4 Cup of fresh carrot, sliced or grated
1/4 Cup of fresh celery, sliced
1/4 red onion, sliced
1 mandarin orange peeled and sectioned
1/4 Cup mandarin orange peel, chopped
1/4 Cup almonds whole or halves
1/4 Cup black beans, previously cooked (optional)
Chicken, previously cooked (optional)
Crushed red chili pepper, to taste
Sea salt, to taste
1) Place all the ingredients in a salad bowl.
2) Add the mandarin orange dressing from @flaviashealthykitchen.
3) Here you can be a little creative and add chicken or any other vegetable or animal protein if you desire. (Serves two)
