Pinto Bean and Mustard Dressing @flaviashealthykitchen
Ingredients:
1/2 Cup olive oil.
3 Tbsp lime juice.
1/4 Cup Pinto beans, previously cooked or canned and drained.
1 or 2 Garlic cloves, minced.
1 scallion, thinly sliced.
1 tsp Dijon mustard.
1 Tbsp Maple syrup.
1 tsp lime peel, finely grated.
1/2 Cup chopped fresh parsley or 2 Tbsp dried parsley.
2 Tbsp sunflower seeds (optional).
1/4 tsp white pepper or to taste.
1/8 tsp paprika.
1/8 tsp turmeric.
Sea salt to taste.
Preparation: Place all the ingredients in a food processor or a blender and mix for few minutes until you reach the desired dressing consistency.
Serves 4 to 6 people.
