Rainbow Quinoa Salad - Flavia's Healthy Kitchen

How beautiful is to be in a state of wonder and curiosity! Even something as simple as exploring new ingredients in a salad can inspire that sense of discovery.


This quinoa salad is a great and healthy option when entertaining friends and family.


It is also great for outdoor picnics or a day at the beach this Memorial Day weekend.

My kids love this salad. It is one of the ways I get them to eat kale. Kale is not their favorite green, but I love it because it is packed with powerful nutrients like vitamins A, K, C, B6, calcium and wonderful antioxidants. It is a wonderful addition to this bright and colorful salad.


Flavia's Healthy Kitchen

Ingredients:

2 Cups fresh Lacinato (dinosaur) kale, chopped.

1 Cup quinoa, previously cooked.

1/4 Cup fresh cilantro leaves, chopped.

1/2 Cup black beans or chickpeas, previously cooked or canned and drained.

1/4 Cup red onion, chopped.

1/2 Cup cucumber, chopped or diced.

1/4 Cup sweet red pepper, chopped.

1/4 Cup sweet orange or yellow pepper, chopped.

1/4 Cup green bell pepper, chopped.

4 Cherry or Campari tomatoes.

1/2 Cup carrots (diced or shredded).

1/4 Cup green peas.

1/4 Cup corn kernels.

1/2 Cup mango sliced or chopped.

Crushed red chili pepper, to taste.

Sea salt, to taste.

Avocado dressing from @flaviashealthykitchen 🙏🏻💓 or

Mango dressing from @flaviashealthykitchen 🙏🏻💓.

Serves 4

1) Place all the ingredients in a salad bowl.

2) Add the avocado dressing from @flaviashealthykitchen or if you prefer a sweeter dressing you can add mango dressing from @flaviashealthykitchen

3) Feel free to be creative! The tomatoes, carrots, green peas and corn are optional ingredients. You may skip them if you don’t have them on hand. Or try adding chicken or another plant-based or animal protein if you desire.
