This pesto, unique to my Sicilian roots, takes the Italian staple in a new direction with the bold flavor of mint and hearty almonds. It was one of Antonio’s favorites!

This pesto, unique to my Sicilian roots, takes the Italian staple in a new direction with the bold flavor of mint and hearty almonds. It was one of Antonio’s favorites!





Ingredients:


2 Cups fresh basil leaves (previously washed)

1 Cup fresh spearmint leaves (previously washed)

6-8 Organic Campari tomatoes (12 oz., previously chopped and seeded) 3 garlic cloves

1/2 Cup extra virgin olive oil

1/4 Cup raw or toasted almonds

1/2 Cup water from the pasta already boiled

Sea salt to taste

Crushed red pepper or black pepper to taste



Preparation:

Place all the ingredients in a food processor or a blender.

Mix for few minutes till you reach the desired sauce consistency. Add 1/2 cup of water from the pasta that you’ve already boiled.





Enjoy with Love on your favorite pasta!!
